Whole Grain Muffins

3/4 cup skim milk
3/4 cup bran cereal
1 egg
1/4 cup canola oil
1/4 cup molasses or honey
1/4 cup brown sugar
1 cup oatmeal
2/3 cup flour
1 teaspoon baking powder
1/4 teaspoon salt

In a large bowl, combine milk and bran cereal. Add in the egg, oil, molasses or honey, and brown sugar. After mixing well, add the oatmeal, flour, baking powder, and salt. Mix well. Put in muffin cups (makes 12 muffins). Bake in a 400 degree oven for 15 to 20 minutes. Nuts or raisins can be added for more flavor.
