Peanut Brittle

1 cup sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1/4 cup water
1 cup peanuts
2 tablespoons butter
1 teaspoon baking soda

 

 

Butter a jelly roll pan (15 ½ x 10 ½ x 1 inch). Combine sugar, corn syrup, salt and water in a medium saucepan over medium heat. Once the sugar is dissolved, add the peanuts and put a candy thermometer into the mixture. Stir mixture constantly until the candy thermometer reaches 300 degrees. Remove from heat and add butter and baking soda. Stir vigorously until butter and baking soda are thoroughly mixed in. Quickly pour into jelly roll pan and spread out as evenly as you can. Once cool, break into pieces. This recipe does not make a very large batch so if you are planning to give a lot away, making a double batch is a good idea. The mixture hardens quickly after removing it from the heat so be sure to have the butter and baking soda premeasured and easily available.
