| 1 cup oil (canola to make it healthier) 1 1/4 cup sugar 1/2 cup skim milk 2 eggs 3 cups flour 1 teaspoon baking powder 1/2 teaspoon salt 1/2 teaspoon baking soda 1 teaspoon cinnamon 1 teaspoon vanilla 1 cup raisins 1 cup walnuts, chopped (optional) 3 cups oatmeal |
Mix together the oil, sugar, and milk. Add in the eggs and beat them into the mixture thoroughly. Sift in the flour, baking powder, salt, baking soda, and cinnamon. Mix well. Add in the vanilla and mix well. Add in the raisins and walnuts. Add the oatmeal in last. Grease a cookie sheet and drop by teaspoons onto the sheet. Bake in a 350 degree oven for 10 to 12 minutes.
