Healthy Oatmeal Cookies

I am making a baking scrapbook for my grandmother with some of the recipes I got from her. My daughter and I bake a recipe every other week, I take lots of pictures, and I put together a little story of what happened when we made the recipe. It’s been a lot of fun and I think it will make a nice gift for my grandma. Here is one of the recipes we’ve tried out.

1 cup oil (canola to make it healthier)
1 1/4 cup sugar
1/2 cup skim milk
2 eggs
3 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla
1 cup raisins
1 cup walnuts, chopped (optional)
3 cups oatmeal

 

Mix together the oil, sugar, and milk. Add in the eggs and beat them into the mixture thoroughly. Sift in the flour, baking powder, salt, baking soda, and cinnamon. Mix well. Add in the vanilla and mix well. Add in the raisins and walnuts. Add the oatmeal in last. Grease a cookie sheet (if you use a Calphalon 14x15 Classic Nonstick Cookie Sheet , don’t grease the sheet) and drop by teaspoons onto the sheet. Bake in a 350 degree oven for 10 to 12 minutes.
