Golden Pumpkin Cookies

The smell of pumpkin baking always conjures up memories of Thanksgiving for me. Pumpkin pies, bars, breads, cookies. The tantalizing combination of cinnamon, nutmeg, ginger, allspice, and pumpkin wafting through the air on a crisp November day.
1 1/3 cups sugar
1/3 cup shortening
3 beaten eggs
1 teaspoon vanilla
2 1/2 cups flour
4 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon ginger
1/4 teaspoon allspice
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon lemon juice
1 teaspoon grated lemon rind
1 cup raisins
1/2 cup chopped nuts
1 cup canned pumpkin |

Cream together sugar and shortening. Add eggs and vanilla. Add in flour, baking powder, salt, ginger, allspice, nutmeg, and cinnamon. Mix in lemon juice, rind, raisins, nuts, and pumpkin. Drop by teaspoons on a greased baking sheet. Sprinkle with cinnamon and sugar. Bake in a 350 degree oven for 15 minutes.
