Fresh Peach Pie

Peaches have just come into season here in Colorado so a peach pie recipe seemed perfect to share. I’m not sure why but the smell of peaches brings back memories of canning time on the farm. Rows of jars, buckets full of fruits and veggies to can, the heat of stove and all that boiling water. It always seemed like the kitchen was always going nonstop from dawn to dusk during canning time. And peaches were always one of my favorites. 

1/2 cup flour
1 1/2 tablespoons sugar
1 teaspoon salt
1/2 cup oil
2 tablespoons cold milk

In a small bowl, combine the flour, sugar, salt, oil and milk. Mix together with a fork until the mixture is crumbly. Put the mixture into a 9-inch pie pan and press into the pan firmly. 

 

4 cups fresh peaches, sliced
cinnamon and/or nutmeg 
1 cup sugar
4 tablespoons butter
2/3 cup flour

In a small bowl, combine the sugar, butter and flour. Mix together until the butter is cut into the mixture completely. Put half of this mixture into the pie crust. Put the peaches on top of the mixture. Then add the rest of the mixture over the top of the peaches. Add the cinnamon and/or nutmeg evenly over the top. Bake in a 350 degree oven for 1 hour.
