2 cups raw cranberries, halved
1/2 cup molasses
2 teaspoons baking soda
1/2 cup hot water
1 1/3 cups flourIn an 8-inch by 8-inch baking pan, combine baking
soda, hot water, and molasses. Mix well. Mix in the flour and then add
the cranberries. Bake in a 325 degree oven for 45 minutes to one hour.
You can serve it with the following sauce or omit for a lower calorie
dessert.
Sauce:
1 cup sugar
1/2 cup butter or margarine
1/2 cup whipping cream
1 teaspoon vanilla extract
Mix all ingredients together in a medium saucepan. Cook over medium
heat until sugar is dissolved.
