Cheesecake Dessert Cups

Servings: 18

2 packages cream cheese (8-ounces each)
2 eggs
3/4 cup sugar
1 teaspoon vanilla
1 teaspoon lemon juice
18 vanilla wafers
1 can pie filling of your choice

In a medium bowl, mix together the cream cheese, eggs, sugar, vanilla and lemon juice until smooth. Put 2 muffin liners in each opening of the muffin pan. Put one vanilla wafer in the bottom of each opening. Pour the cream cheese mixture over each wafer, leaving a little room at the top of each. Bake in a 350 degree oven for 15 minutes. Allow to cool and then put the pie filling on top of each dessert cup. Refrigerate overnight.
