Carrot Cake

3 cups carrots, grated
4 eggs, beaten
2 cups sugar
1 1/2 cups oil
1 teaspoon cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
2 cups flour
1 cup walnuts

In a large bowl, mix all of the above ingredients in the order listed. Put into greased and floured pans (two 8-inch round pans or a 9-inch x 13-inch pan). Bake in a 350 degree oven for 45 minutes or until toothpick inserted in center comes out clean. Allow to cool.

Icing:
8-ounce package cream cheese, softened
2 cups powdered sugar
1/2 cup butter, softened
Walnuts

Mix all icing ingredients in a medium bowl. Using an electric mixer can help make mixing easier. Frost cooled cake. You may need to increase the amount of frosting if using round pans. Sprinkle walnuts over top of cake.
