Banana Cake

I made this cake for my daughter's first birthday. She loves bananas and I wanted to make something special and different for her first birthday.  She loved it (mostly the frosting on it) and I got compliments from even some of the adults! 


2 1/2 cups flour
1 tablespoon baking soda
1 pinch salt
1/2 cup butter , softened
1 cup sugar
3/4 cup brown sugar
2 eggs
4 mashed bananas
2/3 cup buttermilk
1/2 cup walnuts, chopped well (optional)

 

Preheat the oven to 350 degrees. Grease and flour 2 round cake pans. Combine the butter and sugars in a large bowl. Beat each egg into the bowl separately. Stir the bananas in. Add in the flour, baking soda, and salt. Then mix in the buttermilk. Add the walnuts and pour the mixture into the cake pans. Bake for 30 minutes.
