This bar recipe combines two of my favorite things, raspberries and almonds. The sweet, nutty flavor of this bar recipe is always welcome in our house. Well, at least it always is by me. Trying to get my almost 3-year-old to eat any kind of nut except peanut butter is a challenge. Hopefully she’ll learn to appreciate almonds because they are by far my favorite nut and I love to make recipes that have them. I hope you like them too! 1 cup flour Mix flour, butter, and brown sugar together. Press into the bottom of a 9 x 13 inch pan. Bake in a 375 degree oven for 8 to 10 minutes. Spread the raspberry jam on top. |

Blend the following ingredients together.
2/3 cup sugar
1/2 cup flour
1/2 cup butter, softened
1/2 teaspoon almond extract
2 eggs
Spread this mixture over the jam layer and bake for 25 minutes or until light brown.
Icing
1 1/2 cups powdered sugar
1/4 cup butter, softened
1 teaspoon almond extract
1 to 1 1/2 tablespoons milk
sliced almonds
Beat the above ingredients together and spread over raspberry bars. Sprinkle the sliced almonds over the top.
